Wine & Bubbles
All wine served stage-side in the Ajax Sky Lounge.
Bubbles
Cremant De Limoux Thomas Jefferson Brut Blanc - Gérard Bertrand
Limoux is the area where sparkling wine originated. In 1531, the monks of Saint Hilaire discovered the first wine with bubbles. Located in the foothills of the Pyrenees, these vineyards benefit from the cool conditions required to make sparkling wines of quality. This exceptional quality had even founded an echo across the Atlantic: The White House. Indeed, Thomas Jefferson, was Limoux’ greatest admirer, and he discretely cultivated his love for France and for Limoux sparkling wine. Actually, wine from Limoux was the only sparkling wine to be found in his personal cellar.
Pol Roger Reserve Brut French Champagne
Elegant and refined, the cuvée Brut Réserve is the champagne of all occasions. The Brut Réserve is a blend in equal parts of the three champenois grape varieties: pinot noir, pinot meunier and chardonnay from 30 different crus. 25% reserve wines are used to produce this cuvée. The Pinot Noir (bringing structure, body and power) is mainly produced from some of the best crus of the Montagne de Reims. The Pinot Meunier (ensuring freshness, roundness and fruitiness) is issued from several crus from the Vallée de la Marne and from the Epernay area. The Chardonnay (adding its aromatic complexity, finesse, elegance and lightness) comes from Epernay and some of the best crus of the Côte des Blancs. After four years ageing in our cellars, its style combines complexity, balance and distinction.
Rose
Hampton Water
Rock star Jon Bon Jovi has another major accomplishment under his belt, and this time it has nothing to do with music. The singer’s recently launched rosé, Hampton Water, has been named the best rosé of 2018 by Wine Spectator. When the rocker originally launched the rosé in April with his son and acclaimed French winemaker Gérard Bertrand, the 2017 production sold out before its official release. Hand-picked by the finest wine makers the South of France has to offer, Hampton Water Wine is made up of the perfect blend of Grenache, Cinsault and Mourvèdre grapes. What that all means is the wine is the perfect companion for any occasion.
White Wine
Far Niente Chardonnay 2017
The 2017 vintage opens with aromas of melon, sweet citrus and white blossom floral layered with notes of flint, yeast and sweetly toasted oak. A smooth and focused entry is followed by a silky midpalate with ripe flavors of honeydew and lemon, supported by just of touch of wet stone, yeast and toasted hazelnuts. The finish is long and structured with citrus rind and mouthwatering acid. Aromas of melon, sweet citrus, and white blossom floral layered with notes of flint, yeast, and sweet toasted oak. Pascal Jolivet Sancerre Blanc 2018
Each grape is sorted during the harvest; we work by gravity to respect the natural flow of the juice within vinification process. A light pressing is done to preserve the integrity of the fruit. Terroirs are blended : 50% limestone, 30% limestone clay and 20% flint. Each terroir is vinified separately in thermo-regulated stainless steel tank. Limestone brings minerality and finesse. Limestone clay enhances fruit and richness. Flint provides structure and minerality.
Pinot Noir
Flowers Pinot Noir, Sonoma Coast 2017
Elegant, balanced and expressive, this Pinot Noir represents both our estate and vineyards of our grower partners. Farmed sustainably and with 100% native yeast fermentation, we work hard to take a “hands off” approach to winemaking, allowing the wines to showcase the spirit of the Sonoma Coast. Floral expressions of lilac and fresh roses. Fruit flavors of Santa Rosa plum and cranberry. Notes of cedar, clove and baking spice linger for a long, savory finish.
Cabernet Sauvignon
Faust Cabernet Sauvignon, Napa 2016
Intense yet fresh with juicy blue and black berry notes. Notes of dark chocolate and dried herbs seduce the palate while silky tannins and lifting acidity leads to a layered and lingering finish. A beautiful core of ripe blackcurrants, blackberries and lavender with nuances of cedar chest, pencil lead and camphor plus a waft of tilled soil. Medium to full-bodied, the palate has a nice, firm backbone of ripe, grainy tannins and well-played freshness delivering a long, vibrant finish.
